- 60g butter
- 1 egg
- 2/3 cup sugar
- 4 tbsp milk
- 1 ½ tsp vanilla extract
- 1/2 cup self-raising flour
- Grated rind of 1 lemon
- 6 sachets Enprocal Repair
- Preheat oven to 160°C.
- In a bowl, cream the sugar, vanilla, egg and butter together.
- Add the milk and lemon and stir well.
- Add the flour and Enprocal Repair and stir thoroughly.
- Pour the mixture into 6 muffin cases and bake for 20 minutes.
- Remove from the oven and cool for 15 minutes before serving.
