Enprocal

Lemon Muffins

6 serves | 1 muffin = 1 serve of Enprocal Repair | Prep 10 minutes | Cooking 25 minutes

Ingredients:

  • 60g butter
  • 1 egg
  • 2/3 cup sugar
  • 4 tbsp milk
  • 1 ½ tsp vanilla extract
  • 1/2 cup self-raising flour
  • Grated rind of 1 lemon
  • 6 sachets Enprocal Repair

Method:

  1. Preheat oven to 160°C.
  2. In a bowl, cream the sugar, vanilla, egg and butter together.
  3. Add the milk and lemon and stir well.
  4. Add the flour and Enprocal Repair and stir thoroughly.
  5. Pour the mixture into 6 muffin cases and bake for 20 minutes.
  6. Remove from the oven and cool for 15 minutes before serving.
